Provided are: sCOE-Co1 gene in which sCOE, a synthetic gene coding the neutralizing epitope of PEDV, and Co1 gene, a M cell-targeted peptide ligand, are fused, a recombinant vector including the sCOE-Co1 fusion gene, a host cell transformed with the recombinant vector, a method for manufacturing the sCOE-Co1 fusion protein from plant by inducing the recombinant vector including the sCOE-Co1 fusion gene into plant cells, the plant producing the sCOE-Co1 fusion protein manufactured by the method and a seed of the plant, a composition for manufacturing the sCOE-Co1 fusion protein of the plant having the sCOE-Co1 fusion gene, and a PEDV vaccine composition containing the protein manufactured by the method or the plant as an active ingredient.
