Performing a fermentation process to remove at least one volatile compound comprises: continuously removing the volatile compound from the fermentation process by organophilic pervaporation and concentrating the volatile compounds; and removing excess microorganisms (3), byproducts, water and non-fermentable components by ultrafiltration, evaporation and/or distillation, where the concentrations of all substances involved in a fermenter (2) are held in the steady state at a lower inhibitory value of the respective fermentation process.
