PPROBLEM TO BE SOLVED: To provide a rice flour composition which is produced a kind of rice suitable for flour-based foods, has good workability in the production process, and can be used as a bread-producing raw material excellent in extensibility and plasticity, to provide a method for producing breads using the rice flour as a raw material in good working efficiency, and to provide breads having the same or higher quality as or than that of wheat flour. PSOLUTION: Provided are the rice flour composition which comprises rice flour produced from improved rice containing a gluten precursor in albumen in a larger amount than that of wild type rice or a mixture of the rice with wheat flour, to provide breads containing the rice flour composition as a main raw material, and to provide the method for producing the same.
