PPROBLEM TO BE SOLVED: To provide a method for identifying and quantitatively determining fat marbling, and an apparatus for nondestructively measuring marbling, capable of directly computing the mixing ratio of the fatty tissues from the measured results. PSOLUTION: In the method for identifying and quantitatively determining marbling, and in the apparatus for nondestructively measuring marbling, proton longitudinal relaxation time of fats and proton relaxation time of muscles are previously calculated for the fats and the muscles from temporal changes in the intensities of nuclear magnetic resonance signals; and then the intensity of nuclear magnetic resonance signals are measured for butchered meat or fish meat, by using a nuclear magnetic resonance spectroscopy, in a static magnetic field whose strength is in a range that causes the proton relaxation time of fats to differ from the proton relaxation time of muscles, and identifying and quantitatively determining the fats and muscles in the butchered meat or the fish meat are carried out, based on the measured intensities of the nuclear magnetic resonance signals.
