#$%^&*AU2011101303A420120223.pdf#####Abstract An alteration to the design of existing steel wine fermentation tanks that allows the carbon dioxide gas produced during fermentation to be captured and stored. A gas line for extraction of the gas will be connected to the top of the tank at the lid. This will collect and funnel the emitted gas, first through a cooling/heat exchange device to lower the temperature of the gas, and then it will be pumped into an attached gas cylinder for storage.
