摘要

The present invention relates to a ready to serve Kerala-style sardine curry in a retortable pouch and process of preparation thereof. The retortable pouch has a three layered configuration having atleast a first inner layer of 12.5 u thick polyester sheet laminated with 12.5 u thick second aluminum foil layer and atleast a third outer layer of 85 u thick cast polypropylene sheet. A thermally processed fresh sardine and conventionally prepared curry medium in an predetermined ratio is placed inside the retortable pouch and hermetically sealed. The packed sardine curry possesses a Fo value of 6 and extended shelf life of 12M without refrigeration.
