PROBLEM TO BE SOLVED: To develop a substrate capable of correctly reflecting the total proteinase activity of rice malt participating in the formation of amino acids of a brewed product having important role in the quality of the brewed product, a method for determining the proteinase activity, and a kit for the method.;SOLUTION: The substrate for the determination of proteinase activity is produced by extracting rice protein of rice, rice bran and white bran which are useful as a brewing raw material for rice wine and distilled spirits with lactic acid and precipitating rice glutelin as the main component by isoelectric precipitation. The substrate composed mainly of rice glutelin is used in the method and the kit for the determination of proteinase activity of rice malt.;COPYRIGHT: (C)2009,JPO&INPIT
