PROBLEM TO BE SOLVED: To provide rice grain powder excellent in safety, processing suitability, bioactivity, etc., to provide a method for controlling a particle diameter and a particle diameter distribution of the rice grain powder, and to provide a method for controlling viscosity of the rice grain powder.;SOLUTION: This method for processing rice grains includes subjecting rice grains having ≥20 wt.% amylose content in starch to a wet heating step by steam under 0.05-0.5 MPa pressure condition for 1-60 min, and performing a crushing step.
