PROBLEM TO BE SOLVED: To provide a method for producing and distributing germinated unpolished rice powder for restraining hyperglycaemia, and germinated unpolished rice (abscisic acid and phytic acid salt eliminated) for cooking rice mixed with polished rice because rice cooking in an unpolished rice pressure pot destroys a part of B group vitamin weak to heat to degrade a nutrition value and at the same time, produces acrylamide which is a carcinogen, while natural drying of germinated unpolished rice reproduces harmful abscisic acid and phytic acid salt due to drying stress, and has a defect of worsening a mouth feel in the case of cooking rice mixed with polished rice.SOLUTION: Unpolished rice and soaking water containing phototrophic bacteria are put in an unpolished rice germinating machine which is held to 32°C for 20-24 hours while circulating the soaking water to uniformly and normally germinate the unpolished rice, and abscisic acid and phytic acid are eliminated to obtain activated germinated unpolished rice. The obtained germinated unpolished rice is washed in clear water, put in a steamer to be steamed for 10 minutes in steam of 100°C, cooled to a normal temperature, put in a nylon net bag and frozen. The frozen germinated unpolished rice is thawed and then naturally dried (to the moisture content of 18%), and milled for distribution and selling.
