The method for controlling a mashing process in a mash vessel (02) or a mash tube reactor, comprises removing a test volume of a mash (03) containing starch and enzyme from the mash vessel or the mash tube reactor and then heating to a fixed or variable temperature, determining the mash viscosity in the test volume using a viscosity testing device (05), and deriving a control parameter from the mash viscosity for controlling the mashing process with respect to the process temperature and/or the process time and/or the addition of the starch- and/or enzyme-containing process materials. The method for controlling a mashing process in a mash vessel (02) or a mash tube reactor, comprises removing a test volume of a mash (03) containing starch and enzyme from the mash vessel or the mash tube reactor and then heating to a fixed or variable temperature, determining the mash viscosity in the test volume using a viscosity testing device (05), and deriving a control parameter from the mash viscosity for controlling the mashing process with respect to the process temperature and/or the process time and/or the addition of the starch- and/or enzyme-containing process materials. The removal of the test volume and/or the test volume stream and the determination of the mash viscosity are cyclically or continuously carried out, where the test volume or the test volume stream is fed back after the determination in the mash vessel or the mash tube reactor. A prediction for the maximum mash viscosity to be expected in the mash vessel or mash tube reactor is made from the result of the viscosity testing step. An enzyme activity in the mash is derived from the mash viscosity. The test volume or the test volume stream in the viscosity testing device is heated at a temperature of 5[deg] C above a prognosticated gelatinization temperature. The test volume in the viscosity testing device is heated up to reaching predefined results with respect to the viscosity testing. The test volume or the test volume stream in the viscosity testing device is heated at a temperature of 55[deg] C. The mash viscosity in mPa.s is measurable using the viscosity testing device or is considerable from the measured results. The retention time in the viscosity testing device from mash pumps up to return into the mash vessel or the mash tube reactor is 15-300 seconds. The flow rate of the test volume is 1.8-2.6 m/s. An independent claim is included for a mashing system for beer production.
