The brewing process comprises subjecting a wort made of mash to heat treatment, removing hot break from the treated wort and then obtaining a beer through fermentation. A partial stream of the wort is removed during processing of the wort, is mixed with a hops product and is heated at a temperature above the temperature of the remaining wort for an isomerization. The partially isomerized mixture from the wort partial stream and the hops product is added with identical extraction of the remaining wort to the time point in which dispensing of the hops is carried out during the brewing process. The brewing process comprises subjecting a wort made of mash to heat treatment, removing hot break from the treated wort and then obtaining a beer through fermentation. A partial stream of the wort is removed during processing of the wort, is mixed with a hops product and is heated at a temperature above the temperature of the remaining wort for an isomerization. The partially isomerized mixture from the wort partial stream and the hops product is added with identical extraction of the remaining wort to the time point in which dispensing of the hops is carried out during the brewing process. The mixture from the wort partial stream and the hops product is added to begin the temperature treatment of the remaining wort. The fluid is heated at 120-130[deg] C, where a lauter wort stream is used as wort stream. The isomerization is carried during a lautering process. The addition of remaining wort is carried out by extraction with portion of remaining wort. An independent claim is included for a brewing device.
