Droplet forming method for producing microcapsules based on starch, comprising an ingredient embedded in a matrix, comprises (i) producing an aqueous mixture comprising (A) a dry mixture containing (a) a dry mixture of granular starch, and (b) a dry mixture of at least one ingredient comprising e.g. flavoring agent and (B) water, (ii) forming droplets of the aqueous mixture, (iii) solidifying the droplets by gelatinization of the granular starch by raising the temperature of the droplets to more than 5[deg] C in a liquid or a gaseous medium, and (iv) drying the droplets to obtain microcapsules. Droplet forming method for producing microcapsules based on starch, comprising at least one ingredient embedded in a matrix, comprises (i) producing an aqueous mixture comprising (A) a dry mixture (10-90 wt.%) containing (a) a dry mixture of granular starch (at least 5 wt.%) as matrix former, and (b) a dry mixture of at least one ingredient (at least 1 wt.%) comprising flavoring agent, pharmaceutical agent, nutraceutical, nutritional and/or agricultural chemical, and (B) water (10-90 wt.%), (ii) forming droplets of the aqueous mixture, (iii) solidifying the droplets by gelatinization of the granular starch by raising the temperature of the droplets to more than 5[deg] C in a liquid or a gaseous medium, and (iv) drying the droplets exhibiting the particles of destructured starch to obtain microcapsules. An independent claim is also included for the microcapsule based on starch comprising at least one ingredient that is embedded in a matrix, obtained by the above method, comprising (a) a dry microcapsule of granular starch (5-99 wt.%), (b) a dry microcapsule of at least one ingredient (1-95 wt.%) comprising flavoring agents, pharmaceutical agents, nutraceutical, nutritional and/or agricultural chemical, (c) a dry microcapsule of polyols and/or sugar (0-94 wt.%), preferably sucrose, glucose, lactose, fructose, maltose, ribose, dextrose, isomalt, erythritol, sorbitol, mannitol, xylitol, lactitol, pentatol, arabinose, pentose, xylose, galactose, trehalose and/or mono- and oligosaccharides, (d) a dry microcapsule of dextrins or maltodextrins (0-94 wt.%) with a dextrose equivalent of greater than 5 and less than 25, (e) a dry microcapsule of glycerin (0-90 wt.%), (f) a dry microcapsule of dissolved starch (0-60), (g) a dry microcapsule of a thickening agent (0-50), (h) total water in the microcapsules (0.1 to 50), where the microcapsule comprises interconnected starch particles, preferably interconnected particles of destructured starch.
