PROBLEM TO BE SOLVED: To provide a method for producing a GABA-rich food from a protein raw material containing glutamic acid, and to provide a new GABA-producing lactic acid bacterium.;SOLUTION: This method for producing the GABA-rich food comprises fermenting a hydrolysis product obtained by hydrolyzing a glutamic acid-containing protein material in an aqueous system and/or a glutamic acid-containing amino acid mixture with a γ-aminobutyric acid-producing bacterium: Lactobacillus curvatus.
