To reduce the coking on the metal walls of a hydrocarbon cracking reactor or other organic compounds and on the metal walls of a heat exchanger placed after the cracking reactor, the metal surfaces coming into contact with the organic material to be cracked are pretreated with a stream of water vapor containing at least one silicon compound and at least one sulfur compound.
