Analytical procedures by electrophoresischiral capillary for rapid separation of enantiomers fromnon-protein ornithine amino acid and its determination infoods.;The invention consists in the development of twoprocedures under different analysis conditions: conditionsBasics using borate buffer containing a cyclodextrin (CD)neutral as chiral selector and (ii) acidic conditions usingphosphate buffer containing a dual system of CDs (neutral andanionic) as chiral selectors. These analytical proceduresallow the determination of the L and D form of ornithine (Orn) infood samples.;They are a great advance because they are the firstprocedures under totally different conditions that have beendeveloped using the electrophoresis separation techniqueCapillary (EC) for chiral analysis of Orn in the field offood at considerably lower separation times to those used by other separation techniques. In addition, they arecomplementary procedures that allow contrastingresults obtained for food samples, which is of aGreat interest for complex samples.
