PROBLEM TO BE SOLVED: To provide an oil-in-water emulsified product having a whipping function even under an acid condition, and to provide an oil-in-water foam-containing emulsified product well balanced in overrun value and hardness under an acid condition.;SOLUTION: (1) The oil-in-water emulsified product is obtained by mixing glycerophospholipid and phospholipase excluding phospholipase A2. (2) The oil-in-water foam-containing emulsified product has an overrun value of 80-200%, a hardness measured by a rheometer of 30-300 gf, and a pH not more than 5.5. In a preferable aspect, lecithin is used as glycerophospholipid, and phospholipase A1 is as phospholipase.;COPYRIGHT: (C)2010,JPO&INPIT
