The process for vinification of grape must obtained after grape harvest, comprises macerating the must in a sealed container (10), alcohol fermenting the macerated must, reproducing the macerated and fermented must in the container immersed in a marine medium (12) with predetermined depth of 10-40 m, and anchoring the container on a bottom (18) of the medium so that the container undergoes undulatory agitations in response to the natural movements of the medium. The container is present in the form of an egg shell, and is made of an inoxidizable material such as concrete.
