The device for shaping baguette dough (1), comprises a frame arranged in a hopper (2) for introducing dough in the device, a system for flattening the dough with two cylinders (4, 5) arranged below the hopper, a first assembly for rolling the flattened dough with two first rollers (6, 7) around which a first endless belt (8) moves, a first fixed shaping sheet arranged opposite to the first outlet belt to define a first passage for rolling the flattened dough by scrolling it between the sheet and belt, and a second assembly for rolling the rolled dough by scrolling with two second rollers. The device for shaping baguette dough (1), comprises a frame arranged in a hopper (2) for introducing dough in the device, a system for flattening the dough with two cylinders (4, 5) arranged below the hopper, a first assembly for rolling the flattened dough with two first rollers (6, 7) around which a first endless belt (8) moves, a first fixed shaping sheet arranged opposite to the first outlet belt to define a first passage for rolling the flattened dough by scrolling it between the sheet and belt, a second assembly for rolling the rolled dough by scrolling with two second rollers around which a second endless belt moves, a second shaping sheet coated with a deformable elastic layer, which is removable and static between the first and second endless belt in a position adjacent to the deformable layer, and a unit for rotational movement of the cylinders and rollers around their respective axis. The second assembly for rolling is placed opposite to the first assembly and the first shaping sheet to define a second passage for elongation of rolled baguette dough by scrolling. The second sheet is made of a flexible material, and is introduced between the first and second assembly for rolling. The second sheet is equipped with a holding unit connected to the frame under the first and second rolling assemblies. The holding unit is a motorized mechanical unit for introduction and withdrawal of the second layer between the first and second assemblies. The deformable elastic sheet is partly composed of a resilient material, and comprises a flexible casing arranged to be filled and emptied by gas or liquid. A table is arranged under the first and second assemblies for receiving the baguette, which is shaped in the device, and is equipped with a slit by which the second sheet is introduced between the first and second rolling assemblies and removed from bottom of the table. The holding unit is constituted of a third roller that is movable around its axis of rotation. The second sheet is fixed with the third roller and is rolled to be withdrawn from the first and second rolling assemblies.
