The method involves circulating mixture in a duct, and cooling the mixture in circulation to form hydrates particles. A gas concentration in oil, an adhesion force of the hydrate particles which form aggregates and a fractal dimension quantifying compactness of the aggregate are determined. A relation expressing viscosity of the mixture based on temperature, water content of the mixture, gas concentration in oil and speed of shearing of the mixture are determined by taking into account values of the adhesion force and fractal dimension.
