PURPOSE: Germinated brown rice containing high content of - aminobutyric acid and a preparing method thereof are provided to give heat shock to washed brown rice in order to germinate the rice grains at reduced costs. CONSTITUTION: A method for preparing germinated brown rice containing high content of - aminobutyric acid comprises the following steps of: washing brown rice grains(S110); performing heat shock treatment to the rice grains in a constant-temperature container of 20 ~ 45C for 40 ~ 60 minutes; dipping the heat-shock treated rice grains in water(S120); taking out the rice grains and germinating them(S130); and drying them with hot air(S140).
