The present invention refers to a food product resulting from cooking the base of the leaves and heart of a maguey plant pertaining to the species agave Angustifolia haw, the product being obtained due to the technological improvement of the traditional cooking process that introduces a technical process intended for manufacturing paste and a suitable process for dehydrating the same, wherein both processes allow the nutritional qualities of the previously obtained maguey paste to be maintained at a maximum extent. Food products based on moisturised or dehydrated maguey paste are also protected, as well as maguey flours.
