PPROBLEM TO BE SOLVED: To provide a simple method for producing a powdery functional food material with hard-to-digest tendency and other functions modified, thus having wide applicability, and to provide the resultant powdery functional food material as a processed product. PSOLUTION: The method for producing a powdery functional food material as a processed product imparted with specific functionality by artificially transforming the properties of a powdery raw food material is provided, wherein, (1) the method comprises conducting a heat treatment in the air of a powdery raw food material while keeping particles constituting its powder in a separated condition, thus obtaining the objective powdery functional food material imparted with hard-to-digest tendency, emulsifiability and/or antioxidizability, (2) the powdery raw food material comprises wheat flour, rice flour or carbohydrate material powder.
