According to the present invention, there is provided a formulation of herbal appetizer based on various parts of natural wild herbs found in altitude areas like Ladakh, Lahaul-Spiti etc. The herbal appetizer does not contain any preservative as well as any artificial colour or flavour. Though the pure herbal parts are not suitable for direct consumption, the herbal appetizer, thus, formulated of the present invention retains all the qualities of herbs with minimal processing and has a good taste suitable for direct consumption. The herbal appetizer has excellent storage capability upto two years in high altitude areas like Ladakh in India. The herbal appetizer is rich in thymol, carvone, aloin, t-anethole etc and has medicinal properties such as stimulant, antacid, astringent, digestive, carminative, laxative and useful against constipation.
