PROBLEM TO BE SOLVED: To provide a nondestructive quality evaluation device for vegetables, capable of measuring the sugar content and the acidity of greens and fruits that has high accuracy, in a non-contact and nondestructive manner, at the same time and is easy to carry, and to provide a nondestructive quality evaluation method that uses it.;SOLUTION: The nondestructive quality evaluation device 1 for vegetables is equipped with a light-emitting part 12 for irradiating vegetables, such as a mandarin orange 2, or the like by means of near-infrared rays; an imaging part 13 and an image processing part 14, both of which capture projected images by the transmitted near-infrared rays and calculates the luminance distribution thereof; a magnetic field generating part 16 for generating an AC magnetic field, to produce eddy currents in the mandarin orange 2; a detection part 17 for detecting the induced electromotive force or the induced current generated due to the eddy current; and an arithmetic part 15 for calculating the maximum luminance and the minimum luminance of the projected image.;COPYRIGHT: (C)2008,JPO&INPIT
