A method (M1) for roasting coffee by (a) preparing the processed coffee beans, optionally by preparing coffee cherries and processing them to remove the pulp, (b) roasting the beans and then (c) removing the white pellicles from the roasted beans, also involves (d) grinding the separated pellicles. Independent claims are included for (1) a method (M2) for making the basis of a drink by carrying out the above process (M1) and using the ground pellicles (2) a method (M3) for producing a drink, especially a cold drink, by making an aqueous extract of the pellicles from M2 (3) a drink, especially a cold drink, containing an extract made by M3.
