A herb extracting apparatus with an improved sulfite removal efficiency is provided to improve the removal efficiency of a toxic substance such as the sulfur dioxide remarkably. A herb extracting apparatus with an improved sulfite removal efficiency includes a body(A), an extracting tank(B), and a condensing unit(C). The body heats the extracting tank, generates a heat source, and collects the water. The condensing unit converts a steam into a liquid state and includes a first cooler(20), a second cooler(30), and a third cooler(40), wherein volume rate of the first cooler: the second cooler: the third cooler is 50: 2: 1. A first connecting unit connects the extracting tank and the first cooler. A second connecting unit connects the first cooler and the second cooler. The third connecting unit connects the second cooler and the third cooler. And, a second exhaust hole(45) is positioned at an end of the third connecting unit.
