Provided are a method for preparing a chitosan-ascorbate (vitamin C) composite powder which is free from a sour taste, is soluble in water and is improved in antioxidant activity and stability, and a composition containing the chitosan-ascorbate composite powder which is applied to various liquid food, kimchi, etc. The method comprises the steps of adding 5 gdml of chitosan (2,024 kDa) to 100 mL of 5% vitamin C aqueous solution and dissolving it with stirring at a room temperature within a hour; and freeze-drying it at a temperature of -70 deg.C and pulverizing it. The composition comprises 0.2-1.0 wt% of the chitosan-ascorbate composite powder prepared by the method.
