A method for the production of carrageenan (s) gelling agent (s), in which precursor (s) of carrageenan (s) gelling agent (s) containing (n) mono- component seaweed is (are) subject (s) aa ) a heterogenous reaction step in an aqueous alkaline medium having a concentration of OH- and a temperature which enable the modification to the desired scope of precursor (s) of carrageenan (s) gelling agent (s) carrageenan (s) gelling ( s); b) optionally, one or more step (s) washing to wash out excess alkali; c) optionally drying and optionally grinding to obtain refined carrageenan semi-(SRC); and / or d) optionally, an extraction, purification and isolation to obtain refined additional carrageenan (RC); wherein the concentration of OH- required by the seaweed for modification in step a) is obtained by a solution of one or more of the alkalis selected among NaOH, Na2CO3, phosphates Na, K2CO3, K-phosphates and ammonia are supplied thereto, optionally also comprising other suitable alkalis, and that the aqueous alkaline medium has a sufficient salt concentration to prevent essentially dissolution (or) carrageenan (s) gelling agent (s) present (s ) in the tissue of seaweed.
