PPROBLEM TO BE SOLVED: To provide a method for making the intrinsic tastes of vegetables and/or beans remarkable by removing the unpleasant taste and odor, for example, brassy smell or astringent smell from the vegetables and beans with lactic bacteria. PSOLUTION: Lactic bacteria is added to a processed food of vegetables and/or beans and stored thereby suppressing the amount of lactic acid formed to 0-0.3 % to remove the unpleasant taste and odor of vegetables and beans.
