The present invention is related to a process for manufacturing an amaranth milk or beverage from skimmed flour of burst amaranth. The process includes adding an antioxidant agent such as ascorbic acid, erythorbic acid and salts thereof in specific amounts during the process for obtaining the aqueous suspension, thereby warranting the stability thereof under temperature variations during pasteurisation. The beverage comprises three times as much protein and twice as much calcium as cow's milk, a low content of lipids and carbohydrates, and includes vitamin C. The inventive beverage does not contain cholesterol, lactose or toxins since it is a vegetable beverage; there is no other amaranth milk or beverage currently available in Mexico so far. The beverage manufacturing process is original and novel, said beverage being a suitable option for people who present cow's milk intolerance and for all people in general, particularly for children and elderly people who require a product with a high content of proteins and minerals, and a low content of lipids and carbohydrates.
