PROBLEM TO BE SOLVED: To provide a pH adjuster for nonphosphate frozen paste produced in response to such requirements as to improve jelly strength of products gelatinized with heat through reviewing production condition such as, in particular, the kind and the composition each of the pH adjuster to be added to bleached fish meat when producing the nonphosphate frozen paste using the bleached fish meat as raw material.;SOLUTION: The method for producing nonphosphate paste comprises adjusting pH of the paste in a specific range by addition of a mixture of potassium carbonate and glycine as the pH adjuster in a process of producing nonphosphate frozen paste so as to obtain high jelly strength when gelatinized, and is also adaptable to long-term freezing storage.;COPYRIGHT: (C)2007,JPO&INPIT
