The spicy Mexican Chorizo sausage is composed of ground pork, pork fat and wine vinegar together with a number of spices. After mixing, it rests at a cool temperature overnight before packing into a sausage skin for shock freezing. The sausage has to be grilled before consumption, without the skin.
