PURPOSE: A food composition containing a protein extract of Acanthopanax Senticosus(Rupr. et Maxim.) Harms, crude protein polysaccharides or a mixture thereof as an effective ingredient is provided which exhibits excellent radiation protection effect. CONSTITUTION: The food composition contains 50 to 99.5% by weight of a protein extract of Acanthopanax Senticosus(Rupr. et Maxim.) Harms, crude protein polysaccharides or a mixture thereof. The protein extract of Acanthopanax Senticosus contains at least 6 proteins having the molecular weight of 22,000 to 100,000 and is prepared by extracting in phosphate buffered saline solutions, precipitating the protein fractions with saturated ammonium sulfate solutions, solubilizing and dialyzing the protein precipitates with phosphate buffered saline solutions and freeze drying after centrifuging the resultants, recovering the supernatant and filtering.
