PURPOSE: A health beverage containing silver ion water, or gold ion or silver ion which is coated with protein is provided. The beverage is storable for a long period time without addition of preservatives and beneficial for human health. CONSTITUTION: The health beverage contains silver ion water, or gold ion or silver ion which is coated with protein. The protein is one or more selected from the group consisting of gelatin, carboxy methylcellulose, alginate, Arabic gum, acacia gum, methylol melamine, methylol urea and its derivatives. For an example, 10mg silver rod having a purity of 99.99% is soaked in 100ml and electrolyzed to give silver ion water, which is added with 100ml gelatin and agitated at 100rpm for 10min to give silver ion coated with gelatin. A persimmon vinegar beverage is prepared by mixing 5% by weight of persimmon vinegar, 15% by weight of liquid fructose, 0.1% by weight of citric acid, 0.05% by weight of sodium citrate, 0.1% by weight of flavors, 3 to 50ppm silver ion coated with protein and the remaining portion of distilled water.
