The procedure consists of cutting the whole sparerib joint in one rectangular and homogeneous piece, making notches in the flesh along the lines of bones that are to be retained in the final product, and cutting out other bones before dividing the joint into portions that contain at least one bone section each. Each final product (100) is approximately rectangular in shape, with the ends of the retained bone sections projecting from it, and requiring no further cutting prior to cooking and serving, e.g. with a barbecue or soy sauce.
