During a drinks fermentation process an assembly monitors the advancement of the reaction in one or more enclosed tanks by determining the mass of gas present by direct or indirect means. The measuring system receives alternating samples from different tanks via a valve system, thereby determining the progress individually for each tank. The assembly further determines the pressure of the fermenting gas. The assembly incorporates an electronic device that registers, stores and processes the values measured. The assembly further has an electronic device that regulates the temperature and pressure individually within each tank and in accordance with a pre-defined time-temperature profile.
