(-)-Carvone dimethyl acetal, (-)-carvone diethyl acetal and (-)-carvone-1,2-butylene glycol acetal are new compounds . An Independent claim is also included for aroma and flavorant compositions containing (-)-carvone acetals of formula (I). R-R6 = H or 1-4C alkyl or R4 and R6 together form a carbon linkage or a group of formula -(CR7R8)x-; x = 1 or 2; and R7 and R8 = H or 1-4C alkyl.
