PURPOSE: A method of processing packed uncurdled tofu by adding black sesame seeds to an uncurdled tofu material during the manufacture is provided. The uncurdled tofu contains rich nutrients while having a chewable texture and the characteristic taste and flavor of sesame seeds. CONSTITUTION: A soaked bean is ground into 100 meshes or less, soymilk is separated from bean dregs. The soymilk is heated at 100deg.C, cooled to room temperature(20 to 25deg.C) and curdled with D.G.L, followed by packaging. In the process, 5 to 15% by weight of roasted sesame seeds are added to the soymilk.
