PURPOSE: A method of smoking spent laying hens fed with feed containing alpha-tocopherol, cuttlefish liver oil is provided. It increases the amount of moisture, crude protein, crude ash or the like in body tissues of spent laying hens, thereby to improve meat quality. CONSTITUTION: The method of smoking spent laying hens comprises: breeding spent laying hens at an age of 70 to 72 weeks with feed containing 4.5 to 7.0% by weight of alpha-tocopherol, 0.5 to 1.0% by weight of cuttlefish liver oil and 92.0 to 95.0% by weight of an excipient; slaughtering the spent laying hens without damaging the skin; soaking the slaughtered spent laying hens in sauce liquid for 8 to 12hr at room temperature; heating the socked spent laying hens for 1 to 2hr at 80 to 100deg.C; and spraying a mixture of smoking liquid and water on the surface of the spent laying hens.
