PROBLEM TO BE SOLVED: To provide a simple method for measuring the cloud point of a polyglycerin fatty acid ester and methods for assessing the physical properties of and for producing a polyglycerin fatty acid ester both using the measuring method. ;SOLUTION: In this method for measuring the cloud point of a polyglycerin fatty acid ester (PoGE), the temp. of a homogeneous water soln. prepd. by adding a salt and/or a polyhydric alcohol to a PoGE is raised to form a heterogeneous phase. The physical properties of a PoGE are assesed by making the cloud point-added salt concn. profiles of the standard PoGE and the sample PoGE by using the above measuring method and comparing the two profiles. A PoGE having desired physical properties is produced by making and comparing the cloud point-added salt concn. profiles of the standard PoGE having desired physical properties and the sample PoGE produced under specified reaction conditions and controlling the reaction conditions depending on the difference between the two profiles.;COPYRIGHT: (C)1997,JPO
