A cell of transparent material (1) containing a piston (8) is placed in an enclosure (2) surrounding the cell to pressurize its exterior. A mirror (11) is placed in the enclosure, so that the whole transparent cell can be seen (12) via a porthole (10) in one wall of the enclosure. The cell is seen through a focussing lens (13). A rod (19) of constant section passes through the cell in a sealed manner carrying a means (20) of detecting a liquid/gas interface and a means (22, 24) of sampling the fluid in the cell, with means of displacing either or both the detector and the sampling device along the rod. The rod also carries an agitator which can be moved in the cell. The rod passes through the piston. The sampling device is a needle (24) and a seat, with the needle coaxial with the rod. A pump (18) controls the pressure in the enclosure, so it is equal to the pressure in the cell. The detector is an optical fibre (21) integrated into the rod.
