The long-life cheese comprises a mature, soft cheese portion with a bloomy rind in a selectively permeable package which controls the oxygen and carbon dioxide content inside it. This allows the bloom to continue to grow on the rind while preventing it spreading to the cut surface of the cheese and also controls its ripening.
