The present invention relates to the use of glutamic acid used to prepare nutritional formulations for treating or preventing permeability hyperactivity or undesirable permeability of a barrier. In particular, according to the present invention, glutamic acid is used in nutritional preparations such as children's foods or intestinal foods. Examples of diseases that require the use of glutamic acid include food allergies, internal drug allergies, sepsis, low blood flow diseases through the intestine, ICU patients, surgical interventions, malnutrition, or neonatal maturation.
