Process characterization and quantification of soy proteins by high-performance liquid chromatography reverse phase perfusion. The object of the invention is the development of an analytical method of high-performance liquid chromatography perfusion reverse phase to characterize and quantify soy protein products in commercial soy in short analysis times. The invention consists of a binary linear gradient in two steps with acetonitrile-water-trifluoroacetic acid to given flow versus time gradient (to maintain a constant volume gradient 9 ml), a temperature between 25 and 60 and detection 254 nm. Injection of the samples in aqueous solution is carried out directly in the chromatographic system.
