The method for the removal of the entire spinal column from a meat carcass involves sawing the column on each side of the vertebrae without penetrating the spinal cord from the commencement of the pelvic girdle (1) to beyond the collar bone (2), so that the neck is cut totally free of flesh on both sides (3). - In an alternative process, the column is sawn on each side of the vertebrae from the commencement of the pelvic girdle entirely out to the atlas bone (7). In this process, the spinal column is not penetrated, and small amounts of bone remain on the neck flesh.
