Food product (A) comprises a substantially solid mass (B), based on chocolate or its analog, in contact with a non-gelled wet phase (C) containing 45-88% free local water. (B) has low uptake of water under storage conditions. (B) comprises (by weight) 43-80% fat; less than 18% defatted, dry cocoa; less than 17% skimmed milk powder and over 13% sugar, and, for the specified (C), has a tau value below 3 where tau = (-W+ 0.37) * MG + (5.25W - 1.67) * (S+PLE) + (26.2W - 9.6) * C +(61W-14.5) *(S+PLE) * C where W = free water content of (C), in g/g; MG = fat content of (B) in g/g; S+PLE = content of sugar and skimmed milk powder, in %; C = dry, defatted cocoa content of (B). The weight ratio dry, defatted cocoa: sugar + skimmed milk powder is below 0.45.
