PROBLEM TO BE SOLVED: To provide a method for preparing frozen Cortinellus shiitake, by which the frozen Cortinellus shiitake can be prepared without deteriorating the nutritive value, taste and flavor of dry Cortinellus shiitake and by which a labor for reconstituting the dry Cortinellus shiitake with water can be saved, and to provide the frozen Cortinellus shiitake prepared by the preparation method.;SOLUTION: This method for preparing the frozen Cortinellus shiitake is characterized by reconstituting the Cortinellus shiitake whose cap portion is dried in a water content of ≤15 wt.%, with sprayed water to a water content of 80 to 90 wt.%, and then quickly freezing the reconstituted Cortinellus shiitake.
