PURPOSE:To provide a safe antimutagenic agent having antimutagenic effect on a wide variety of mutagenic substances and useful for the preparation of food, etc., having improved taste, flavor and preservability by using Lactobacillus sanfrancisco cell as an active component. CONSTITUTION:This antimutagenic agent contains the cell of Lactobacillus sanfrancisco such as cell of Lactobacillus sanfrancisco ATCC 27651, 27652 and 27653 as active component. Preferably, the antimutagenic agent is added to a food before the heat-treatment of the food.
