PROBLEM TO BE SOLVED: To obtain an irreducible bitter agent or improver of taste quality, excellent in stability, and useful for various kinds of drinks and foods, medicine, etc., by including diheterolevulosan II as an active ingredient. ;SOLUTION: This bitter agent or improver of taste quality contains diheterolevulosan II (-D-fructofrunose -D-fructopyranose 1,2':2,1'dianhydride) of the formula as an active ingredient.
