PROBLEM TO BE SOLVED: To provide a simple manufacturing method of highly water absorptive starch. ;SOLUTION: This manufacturing method comprises the following (A)-(D) processes. They are slurring process (A), where water is added to starch, pasting process (B), where the slurried starch is made into paste by heating or by adding a pasting agent, cooling process (C), where the pasted matter is cooled to show freezing appearance, and it comprises a temperature decreasing step (Tc) in which the pasted matter is cooled to freezing point and a temperature keeping step (Tf) in which the pasted matter cooled to freezing point is kept at the temperature for a definite time, and especially, the cooling process wherein the time required for the above-mentioned temperature decreasing step (Tc) to cool from 10°C to freezing point is 5-15 hours and the temperature keeping step (Tf) is 0.5-30 hours, and drying process (D), where the cooled paste is dried under a condition where the starch will not become paste again.;COPYRIGHT: (C)1998,JPO
